Equipment

  • 1 Food processor
  • 1 Knife
  • 1 Cutting board
  • 1 Cast iron skillet
  • 1 Spatula

Ingredients

  • 1 lb Russet potatoes
  • .25 cup Matzo meal
  • 1 Small shallots
  • 1 Egg
  • 1 Teaspoon Salt
  • High quality cooking oil Canola, grapeseed, peanut, etc. Something with a high smoke point.

Instructions

  • Shred the potatoes in the food processor and squeeze out as much liquid as possible using a clean dish towel. The squeezing is important. Squeeze as hard as you can.
  • Peel & mince the shallots.
  • Mix everything together.
  • Form patties.
  • Fry in oil, 4 minutes on a side in the cast iron skillet.
