Whole chicken
Without giblets
Extra Virgin Olive Oil
Salt & pepper
Instructions
Preheat the oven to 425 degrees with the skillet in the oven.
Rub the chicken with olive oil, then salt & pepper.
Roast until done (165 measured with a thermometer in the meaty part of the thigh.
Notes
Variations
Try stuffing 20-30 cloves of garlic under the skin of the breast and the drumsticks.
Sprinkle tarragon on the outside of the chicken.
Spatchcock the chicken the day before and rub it inside out with salt (use a lot, this is dry brining and makes the chicken very tender and juicy).
