Slow Cooked Salmon

This is delicious and easy. Prep is almost nothing, then you can go do something else while the salmon cooks. We make enough for two nights so we don’t have to cook the next night. It goes great with Cumin Rice and Roasted Green Beans.

Equipment

  • 1 12" cast iron skillet
  • 1 Skillet lid
  • Measuring spoons

Ingredients

  • 1.5 lbs Atlantic salmon (farmed)
  • 2 tablespoons Extra Virgin Olive Oil
  • Dried thyme
  • Salt
  • Pepper

Instructions

  • Preparation
  • Turn on a low flame under your skillet.
  • Spread the olive oil to cover the bottom of the pan and put the salmon in it skin down.
  • Sprinkle the fish with thyme, salt, & pepper.
  • Put the lid on the skillet and cook until done.
  • On our stove, with our skillet, with a lid that really seals, the cook time is 33 minutes. Your mileage may vary. The salmon should be pink (not red) all the way through. Some people like their salmon cooked more or less. Authorities say to cook salmon to a temperature of 145 degrees.
