We served this recipe at our Hanukkah party for 2024 (party was actually in early 2025) and the latkes were great. We did a test run a couple days prior to test, and then charged ahead. We bought a small food processor to grate the potatoes, I’m not doing them with a box grater again, too many bloody knuckles.
Latkes
Equipment
- 1 Food processor
- 1 Knife
- 1 Cutting board
- 1 Cast iron skillet
- 1 Spatula
Ingredients
- 1 lb Russet potatoes
- .25 cup Matzo meal
- 1 Small shallots
- 1 Egg
- 1 Teaspoon Salt
- High quality cooking oil Canola, grapeseed, peanut, etc. Something with a high smoke point.
Instructions
- Shred the potatoes in the food processor and squeeze out as much liquid as possible using a clean dish towel. The squeezing is important. Squeeze as hard as you can.
- Peel & mince the shallots.
- Mix everything together.
- Form patties.
- Fry in oil, 4 minutes on a side in the cast iron skillet.
