Roast Chicken

Easy roast chicken. We make this regularly, year after year after year.

Equipment

  • 1 Oven
  • 1 Cast iron skillet

Ingredients
  

  • 1 Whole chicken Without giblets
  • Extra Virgin Olive Oil
  • Salt & pepper

Instructions
 

  • Preheat the oven to 425 degrees with the skillet in the oven.
  • Rub the chicken with olive oil, then salt & pepper.
  • Roast until done (165 measured with a thermometer in the meaty part of the thigh.

Notes

Variations

  • Try stuffing 20-30 cloves of garlic under the skin of the breast and the drumsticks.
  • Sprinkle tarragon on the outside of the chicken.
  • Spatchcock the chicken the day before and rub it inside out with salt (use a lot, this is dry brining and makes the chicken very tender and juicy).
