Roast Chicken
Equipment
- 1 Oven
- 1 Cast iron skillet
Ingredients
- 1 Whole chicken Without giblets
- Extra Virgin Olive Oil
- Salt & pepper
Instructions
- Preheat the oven to 425 degrees with the skillet in the oven.
- Rub the chicken with olive oil, then salt & pepper.
- Roast until done (165 measured with a thermometer in the meaty part of the thigh.
Notes
Variations
- Try stuffing 20-30 cloves of garlic under the skin of the breast and the drumsticks.
- Sprinkle tarragon on the outside of the chicken.
- Spatchcock the chicken the day before and rub it inside out with salt (use a lot, this is dry brining and makes the chicken very tender and juicy).
